I decided to participate this week. I’ve never made squash in my entire life, so this BSI was a good kick in the butt to get me to make something new!
I decided on Roasted Squash with Applesauce. I’ve really been loving applesauce lately, so I thought it’d be nice to incorporate it with my squash. Why have boring applesauce in a bowl when you can have it roasted in an acorn squash bowl? Hell yes.
First, I brought the squash home.
Then, it was time to cut it open!
Once I had two even halves of squash, I dug out the insides to create totally awesome squash bowls. I sprayed the insides with some butter spray and gave them each a dash of salt.
I filled them up with a half cup of unsweetened applesauce and sprinkled the tops with cinnamon.
Into a 350-degree oven they go! I put a bit of water in the bottom of the casserole dish to help the squash not stick to the bottom because the recipe said to. Maybe it was to help them not stick? I dunno.
I kept them there for about an hour or so. It made our entire kitchen smell HEAVENLY.
….and then took ‘em out:
So yummy! Even the boyfriend loved them! Next time I might leave them in there for a few more minutes, but I think it’s because my oven is wacky and isn’t true to temperature.
I feel special, participating in the Blogger Secret Ingredient event. Does that make me a total dork? Probably. Anyway, it was a lot of fun.

ok, so now I must add acorn squash to the food gathering list for today! That looks pretty darn good! I wonder if it would make a good soup base too? hmm…
